I'd like to change brakes up front. When I a buy a new brake do they come complete with levers, hose and calliper. And are they ready to just fit or will it involve cutting the hose and thus lose fluid

Generally, they come ready to fit - although some will need adapters to suit the mount type on your fork - they'll be IS or Post mount, and also to suit the size of your rotor.
You might find the supplied hose is a bit long for your bike, that would involve cutting the hose, fitting a new connector, and possibly bleeding the brake, or you can just live with the slightly long hose.
What brakes are you thinking of? To fit what kind of fork & rotor?
