New Forest?
Flat, many trails, some not exactly legal though
nothing really exiting though but that's largely as requesting in Flat

Thetford is quite flat and has a variety of stuff to choose from.

The middle section of Dalby red is pretty flat and its all linked up by fire roads with nice views.

Thetford. Loads of marked trails and off-piste stuff to explore, flat as you can get but still plenty of fun.
