I'm building up a cove stiffee atm and i've never built up a bike before so I am wondering what is the best way to figure out what kind of rise in the bars and what size stem to go for?

For a 2010 19.5" Cove Stiffee with Fox TALAS 36 RC2's 2010's and I'm 6ft 3.
