Giant XTC from Pauls or Cube LTD Team from CRC. The cube is better for the money- and weighs nothing.

Edinburgh Mountain bikes have one of their own brand models called the Revolution Shadow Mountain that is £999 and supposed to be 24.4lb. Never ridden it but the spec looks decent for that cash - scandium frame, Maintou R7 Elite forks, Deore/XC717 wheels, Race King tyres, SLX/XT drivetrain, SLX hydro's.

That Cube mentioned earlier does look very impressive for the cash though - I'd be surprised if you can find better than that new in the same price range.

09 Trek 6700 for £1000 or the 2010 version for £1150.

2010 has XT cranks & a few other upgrades over 09 model.

What about the Boardman Pro HT? I've not really found anything bad said about one of these yet. I'm hoping they're as good as they sound as I was planning to go and get one at the end of the week!

You will not get better than this http://www.merlincycles.co.uk/custom-mountain-bikes/rock-lobster-mountain-bikes/rock-lobster-tig-team-sl-09.html

For £1050 you could get full xt on it. Instead of SLX for £900
