Today, I experienced the king of toasties, after a cold morning road ride.

Haggis. Goats cheese. Chilli jam.

Nothing can ever come close again...

A friend won some haggis slices a few years back, posh ones.

It took us about four days to get sick of haggis and cheese toasties.

Have enjoyed many a good toastie and done a bit of experimentation. Found egg and ham good use 3 slicesof bread middle slice has hole cut in it to contain raw egg! Nice ham on top.
For desert banana and Nutella ! Really surprisingly good!

If your doing it in a old school toastie machine that you can make an indent in the bread, the best for hangovers is to crack an egg in the indent and toast away...

trust me with this one ok

two slices of bread dipped in egg on one side each

first slice egg side down in a frying pan

then add - gruyere, ham, banana and creme fraiche.

then add the second slice eggy side up, once the first eggy slice is cooked carefully flip the whole thing over

when it starts to leak cheese its ready.

The problem is impatience and hunger combined with a hot toastie can result in the most awful mouth burns - is there a hotter substance than bean and cheese toastie juice?

At the toastie bar at uni. Several pints, then a straightforward ham and cheese toastie with a little bit of brown sauce. The fact that I was 'seeing' one of the girls who were making the toasties so I was virtually guaranteed to be getting my leg over about twenty minutes later also helped. I think food critics refer to this context as 'terroir'!
