Always thought the Madison gear that Cyclestore always seem to be selling cheap is great value.

Singer sewing machine oil for hydraulic brakes works well.

1) Deore or SLX. I have never found a performance increase with XT or XTR and have run deore gears for years.

Best bang for buck is to run deare/slx derailleur with an xt/xtr shifter. Get the brilliant shifting of xtr without having to worry about destroying a £200 derailleur.

Definitely this, multi release only available on XT/XTR, I'm running SRAM on the MTB at the moment and seriously considering a switch back to Shimano just to get the multi release.

Self-amalgamating tape for chainstay protection.

My experience is that this just isn't thick/durable enough and gets cut up really easily. Th 3m mastic tape is far superior and more versatile as you don't need to wrap it, can simply apply where you want it.
