Will I have better tubeless performance etc by buying my own rim's brand of rim tape?
Velocity Rims is very excited to announce their own tape specifically developed for their rim, of course.

There's a WTB version that is the same width (25mm) . . .
it does appear to mean you don't need a rubber strip as well which is different to the stans/joes solutions.

Can't see how that is different to the Stan's yellow tape (which can be used without the rubber strip on their own rims, and by all accounts on others too) or the blue Roval stuff.

Here's the reply from Just Riding Along, who built the wheels up for me:
"You can just use the Stan's kit and valves, there's no difference really. We ordered one in once thinking they might have mega wide tape but it's just the same as the Stan's, only it's blue."
So Stan's it will be.
