Swapping rear 185mm Avid rotor to 160mm - should I order an Avid adapter as well or will my old Hayes/Shimano (160mm) one do the trick?

As long as you use a 160mm IS (on the frame) to Post (the calliper) mount it does matter who made the mount or the calliper.

Even with the cup and cone washers that Avids use?

Yes, as they space out from a standard mount.
I use Hope or Avid depending on which disc does on, still use cup/cone.
