Future lockdowns notwithstanding, we may be going to Les Carroz in August. I know there's a bike park there, and I've been to Morzine etc a few times in the past too.
Can anyone recommend someone who'd do a day's guiding of the LC area?

He's based in Carroz. Loads of brilliant natural riding around there, as well as the bike park.
