Just looking to see if anyone knows whether you can change
the gear cable routing on a Shimano 105 STI lever?

At the moment the gear cable comes out from the side of each lever
assembly. I would like to move it behind the bar tape ?

You can, but you'd need to change to Nokon, Alligator or similar cables. As they're the only type that can go through tight enough curves to go under the bar tape.
