ok, i have got 2012 deore brakes and ice tech rotors (don't ask why) and now they are set up the rotors rub on the discs - are they incompatible? (are ice tech rotors thicker?)
also when doing the old cable shortening and fitting the olive, when the end plug was hammered in the olive could still easily slide up and down the cable - is this correct? does this become bound in when you tighten the main bolt? just making sure i haven't made an obvious mistake...

Sounds right to me. The olive is loose on the hose. In the instructions your meant to insert the hose with the olive in a specific position but as far as I can see once you tighten the shroud nut into the lever everything should move into place. Tightening up the nut crushes the olive (I assume to give a proper seal).
Rotor rub may just be a caliper alignment issue.
