Planning on running my hardtail with a 1 x 10 set up to replace a tired 1 x 9 Shimano XT mech and shifter. What cassettes do the 10 speed boys run? 32 34 or 36 T .

Otherwise, as njee politely puts it, there's no point in running 10spd as you don't gain any advantage.
I ran 11-32 9spd for a short while, I found it limiting. I changed to 11-36 10spd setup, and found just the extra ratio makes all the difference, and I can and have ridden pretty much anywhere with that setup.
agree with mboy, running 11-36 and find can get up most stuff - run with a 34 chain ring

Good for everything except the daftest of crank-me-up climbs, and keeping up with 20mph roadies.
Hardly ever use lowest gear, but with laden bike on multi-day trips up hills, expect to do so.
11-32 was too low for my taste (on 9-speed but it'd be the same on 10 obviously 😉 ) but also sometimes too high. I'm going to have another crack with 34-36 once I wear out the last of my 9-speed stuff.

But mainly because there were more SRAM 12-36 available. Anyway, the 11 end makes no difference to me. The 36 however is very useful. I run it with a 34t.
12-36 10 speed? That's presumably SRAM's way of forcing you to buy their more expensive cassettes then?!
I run a 36t ring and find it fine, fairly strong rider though.
