I particularly hate this and try to never buy steaks from supermarkets. When you’re trying to sear the meat you just end up vaguely stewing it, leaving it with nowhere near the flavour or texture it should have; It really is the devils excrement.
One way of helping this is to dry the meat out in a fan oven if you have one. Put the steaks on a plate with room for air to circulate – or even better is using a clean grill pan. Put the oven on its fan/air circulation/defrost setting for a couple of hours prior to cooking, and this helps evaporate some of the water.
Or, do as I do and support a local butcher. I’ve found that every single butcher I’ve been to has been more than willing to talk to you about meat, which cuts for what, how old to age it etc. They’re always helpful, and the difference in taste from a well aged steak compared to a supermarket piuece of crap is beyond my words, and easily makes up for the pennies price difference.
