are you drinking enough water? I find my levels of fatigue go up far more quickly when I have not drunk enough.

Any possibility of overtraining? Including stress off the bike?
Lyme Disease? Any tick bites recently?
Malnutrition (IBD/IBS can cause this not just diet)?
Glandular Fever? Do you have a sore throat too?
    Medication?

no medication , just supplement raw men vitamins and minerals( non synthetic ) , tribulus tablets few times a week .
i had tick bite few months back , but no sign of round bite that would indicate inficated tick.
    no sore throat…

Because feeling hungry takes your mind off feeling tired?

I’ve personally come to accept that feeling tired all the time is a normal feature of human functioning!

Busy lives, stress, high expectations of ourselves, borderline depressive symptoms, too much alcohol….

Not that this helps YOU much, nor is it at all a ‘proper medical opinion’, but in personal and professional life, often there’s no clear medical cause.
Those who spend their lives hunting for the cause, often exacerbate symptoms of stress and lethargy…sadly…

Anyway, I hope you pick up – these things can be cyclical. If it persists or is debilitating, your GP should be well versed in discussing this issue with you.

my money is on being dehydrated especially if you are riding/sweating a lot and not replenishing. Had it myself a few years ago.

Drink more water and the odd nuun tablet every now and then to replace the minerals you are sweating out.

    Tired after riding?

I can feel knackered for two days after a busy weekend of mountain biking and socialising. Sometimes it’s Wednesday before I feel fully recovered if I have a few drinks on Sunday as well.
