So, if you were 6'3, ~150lbs, what size bib shorts would you wear to avoid bagginess or really really tight shoulder straps?

Depends on the manufacturer, Gore perhaps L, Assos XXL for sure

I'm 6 foot exactly (80 kilos) and I have both dhb and Gore bib shorts in large, so would have thought XL would be better if you're 6'3.

Can't comment on the other brands although some of the European brands apparently are sized small.
