I’d like to get a bearing removal and fitting tool(s) to change wheel and frame bearings, but know nothing about them. Is what i want a bearing “drift” tool? Are there different sizes for each bearing? Will one tool do most bearings? eg
    this?

I made a threaded rod press which just about worked but then I used a proper headset press and decided I definitely “need” the tools! It’s a lifestyle.

a socket set is the ideal drift kit ! You get more sizes than on that link plus they can kill more than one bird if you catch my drift ( no pun intended )!!
Always worth keeping the old bearings as drifts for future too !!
Unless your running out of space in your wallet of coarse in which case buy a park tool one they are suitably overpriced on most things !!

some/lots of bearings are blind – you can’t get ‘behind’ them to tap/push them out.

    you’ll need something like this:

(a selection of expanding widgets, and a slide-hammer)

some people have some success using expanding bolts – i’ve never managed to get this to work.

The blind removal tool only removes them, so I’ll need something else to press them in. I have a cyclus headset press which is e right kind of thing, does anyone know if you can get alternative size fittings for that?

You get specific tools for specific bearing sizes. You can press bearings in in different ways too, they can be tapped in with a hammer and a drift, pressed in using a vice.

    What frame and what hubs?

I’ll mostly use it for bbs which are 6805 bearings, hubs are superstar ones, and possibly Royce but I would hope they won’t need replacing! Frame an intense spider.

For various bearing replacment ideas have a look at the following videos

    Keasae’s you tube channel

Hopes vid for removing BB bearings

Various vids from Hope on how to service hubs etc

most of these vidoes use drifts/presses to remove and replace the bearings, for all but some of your frame bearings i would think this method would work for you too. I don’t know your frame to know if you will need a blind puller to remove any of the bearings but am sure other will be able to advise.
