    Thanks for all the replies. Only just got a chance to check back in.

    I might start with one of those fibre knife block things and then just buy 4 or 5 individual knives. I don’t need anything specialised.

    I might sharpen some of our existing knives to learn how to do it.

    Madame is an exceptional cook, she has one knife which I sharpen for her with a fiskars sharpener that came free with my xl27, and a steel from Tesco

    A sharp knife that feels good in your hand is all you need

    I use a magnetic strip to store my knives and I think its the best option, but over time it magnetizes the blades meaning that teaspoons etc keep getting attached to them
