Potatoes as they can replace any of the other carbs mentioned adequately except for bread. Curry & Chips, Chilli & Chips etc.
I'd miss pizza though, unless I could fashion a potato base.
If we are talking potatoes versus wheat then it gets a bit tricky as it means bread, pasta, pastry, cake etc versus potatoes.

Probably pasta for me, but the loss of bread would make a variety of snacks and portable food much harder to achieve, which would be a problem.

I initially thought pasta.
Then I thought of curry without rice

Cauliflower is not a basic carb, it is a bulking agent for pasta twiddles and cheese sauce, or the essential roast dinner accompaniment that is baked cauliflower cheese.
Anyway.
The undisputed heavyweight king of all carbs is the potato.
A basic boiled new potato is ace with butter and salt. Fry the leftovers with eggs and bacon tomorrow.
Proper Roasties, par boiled then oiled then roasted until crispy and fluffy.
Baked potatos. Turned into mash. My youngest absolutely loves this. Luckily the eldest loves potato skins. Win, win, win.
Numerous potato cake flavours. To whit, fish cakes, hash browns, croquettes, etc.
Add cubes to stews.
Crisps. Thick ones.
And of course the killer app...
Chips.
Bread, particularly if its French.
But it also means I can have pizza as well!

Potatoes for the win. You can make potato flour which then gives you bread and pasta. And if you get bored of the potatoes you can make vodka.
Potatoes. Chips, roast, mash or whatever I love 'em.
Bread.
Delicious homemade sourdough with lots of butter
Bacon rolls
Sandwiches
Naan bread
Kebabs
Pizza
Cinnamon Buns
Banana bread (maybe allowed)

3. Roasting

But back on topic, it was the thought of giving up crisps or pasta which prevented me even attempting a Keto diet, so I'm going to say Pasta (obviously as an accompaniment to a good sauce, a salad, a fistful of grated parmesan and a glass of red)

Bread for me, no debate. Then potatoes. Then pasta. Then rice. In that order.
Rice.
Goes perfectly with Indian, Thai, Mexican, Chinese and quite a few others, so going for the most versatile.
Though "chips" could qualify on the same basis, to be fair.
Oh jings, I'd forgotten about rice pudding. Probably not quite enough to tempt me away from potatoes, but alongside such delights as risotto and biryani, it does make a strong case for rice.
Pasta. So much can be done with pasta, and it usually involves a bottle of red wine which is really the important thing. In fact, stuff the pasta, just wine.
Got to be rice. Add to the list: sushi rolls, paella, arroz brut, rice and beans etc.

Plain pasta or rice?! Yuk. Potatoes omg amazingly versatile but I'm torn as i absolutely love bread and eat it for two meals a day most days plus pizza would come under bread btw... Flour, water, yeast.

Yep. Mashed then returned to skins and topped with cheese for an innings under the grill until bubbly, crisp and golden before aspirating them en masse.
It was how they arrived on the plate when growing up, and so I keep up the tradition.
Oh.. almost forgot one of my fave potato things. Bake the small ones, microwave is fine, then let them go stone cold. Then sprinkle salt over a plate and dab the potatoes in it and eat. It's amazing.
I find that just thinking about this is upsetting. I might have to have a crisp sandwich to cheer me up.

Rice for me I think. I'm just not that into potato, now I like a good roastie but I really don't like baked potatoes, not particularly fussed about mash either.
