During a kitchen cupboard purge, a recipe card that I quite enjoyed was chucked out. I'm sure I can find it on 'tinternet if only I could remember what it was called.

Tomato based dish, cooked in a large frying pan like a big soft Fritatta. Lots of other Mediterranean type vegetables and, (this is the important bit) eggs broken into wells to cook near the end.

I reckon you'll give me the answer within 15 mins.
