I'd hire a cook, a cleaner, a gardener, maybe a driver, and a PA.
For the average wages I can't believe more people don't do these sort of things. Like the slapheaded one off of Ant and Dec - drink driving? The guy has millions. What's 30k year for a full time driver (or whatever).
PA would be worth their weight in gold. Why do you think CEOs have them?
A nice house, not a stupid mansion. If it had a cottage/outbuildings in the grounds you could employ a housekeeper/gardner/handyman couple with the tied cottage as part of the deal.
There would be a boat involved somewhere. Maybe somewhere in the Alps if it was a big win.
My brother has always worked as an ecologist with various charities. I would love to be able to set up a reserve somewhere in conjunction with him, for him to manage.
Theres a lot locally I'd love to sort out in my village too. My cricket club needs a location for a second pitch. The village needs a car park. An old mill site is for sale for development. I'd love to take it on in consultation with the village development plan to ensure a great mix of housing for local people including open space/facilities rather than max profit.

You're basically as rich as a mid-top level sportsperson (e.g. Rory McIlroy).
I'd spend €30-40M on houses, one in London, one in the Alps, one on the Med somewhere (maybe a Greek Island) and probably a Scottish estate, which I'd turn into a nature reserve.
These places will all need staff.
I'd also try and buy all of the Hurtwood, or something else that can be a bikepark in the South East.
Probably €20-30M sorting out friends and family homes.
€50M to provide income for the rest of my life.
The rest (€100M?) would be a charitable trust of some sort. Maybe building pump tracks, maybe building houses, not sure.
Invest in property in either Cypress or Portugal to regain rights to live in the EU. More likely Portugal, I suspect somewhere with easy beach and trail access.
A place in Austria for the ski season, and Thailand or Lombok for the Winter sun.
I’m not really interested in properties so large that needs live in staff.
Hobby wise I’d like to build a fun track day car so a full workshop/garage somewhere, I’d likely try for pilots and day captain licences.
Charity wise I’d look at affordable housing options and I know my wife would look at a cat sanctuary.
Obviously I’d take care of mum and friends.

This made me realise/remember how poor mtb athletes are in comparison. Yes I do understand and accept the reasons why.
Maybe I'd start a pro race team, for all 3 disciplines, let each athlete pick the compononents and bikes they want rather than by who is paying. Mechanics, physios and nutritionists to equal or beat all the other pro teams. See if that actually results in them winning. An expensive experiment for sure, but multimillionaires need some costly hobbies.
It might sound ridiculous, but you would come to realise you aren't rich at all in the Big Boy Leagues. £210M buys you half of Abramovich's latest yacht.

When my daughter was younger she was very much into My Little Pony. Our Euro-Millions top prize plan was to build "Equestria World" - an MLP based theme park. We had a list of friends/relatives who we would employ on good wages to play the MLP character that best matched their personality.
I still have not heard anyone put forward a better plan 🙂
