Well after a bit of playing around I’ve decided it works for me with chicken, beef and lamb using both sous-vide and griddle pan or just griddle.

Bit of an experiment for me playing with sous-vide with a ziplock and a thermometer but delighted with the result.
Griddled cheese sarnies worked so well too.
