For an album, Laser Guided Melodies by Spiritualized has got to be up there.
For a single track, Anenome by Brian Jonestown Massacre gets my vote.

Impossible to pick one track, but I still love Underworld's remix of Mental Generation [i]Cafe del Mar[/i]... can't believe this came out nigh on 20 years ago. It was part of the soundtrack to my A-Levels. 😯

Favourite albums would include:

Went through a stage of playing the k&d sessions mixes and the set they did on 'djkicks' series and went on some sublime mind-trips. Awesome, awesome music. "Going under and I can't turn round".... 😉

Some real good music being posted, what's more, I've not heard most of it! Bring it on.
