i have a chunk of stilton left from christmas that needs using up and i fancy some soup for tea with crusty homebaked rolls.

my obvious idea is brocoli and stilton, anyone alse got any other tasty recipes i could try?

don't overthink it, cheese / stilton makes everything better.

Tomato soup - with stilton crumbled on top.

Oxtail - with stilton mixed in

Cauliflower and Stilton is superb. Follow Gordon Ramsay recipe and chuck the Stilton in at the end.

Any decent soup (maybe not mulligatawny), lump of cheese and crusty bread on side.
Chutney and butter optional.

A word of caution, don't put it in a very rigid container for storage... I once had a litre of broccoli and stilton detonate due to pressure...yuk

the guardian recipe was very good, rich though you wouldn't want an enormous bowl of it.

I managed a decent bowl of it for lunch yesterday 😋 Plus a couple more in the fridge, AND a generous amount in the freezer. No way was that a recipe for 4 people!

I would have gone with cayenne or paprika to garnish, rather than nutmeg.

Tend to add spuds, carrots (not too many) swede and peas as well - whatever's in stock really.

Broccoli and stilton, but bung some apple in with it as well - takes the harsh edge off and sweetens it up a touch...

Stilton Soup by Delia, has potatoes, leeks and cider in it. My other halves favourite soup to the point that he bought me a new pan to make it in as the other one didn't hold enough.
