I am responsible for food tonight. I am not the worlds best person generally and cooking isn't top of my skills list. MrsWCA is a trained cooks so I have been spoilt over the years.

Here is the plan so far

2 Salmon steaks wrapped in Parma ham and fried
White wine and cream sauce
Chips / Side Salad

I have a recipe for the sauce which is slightly sharp to counteract the oil from the fish / ham. The chip / side salad are there because they can either be prepped in advance or left to cook on their own while I panic about the rest of it.

Anything else I should do to accompany it?
Any hints on how long to pan fry (how else do you fry?)the fish ?

I'm not very confident on fish but if I was wrapping it then I'd maybe consider baking it.

Good call. Wrapped in foil with some herb butter and baked. Less chance of combustion too.

In a foil parcel with wine, etc , 18-20 mins at 180 should be spot on

no idea how salmon cooks, by which I mean, timings required.
A favourite dish on mine is chicken wrapped in parma ham, which I do like this

In a foil parcel with wine, etc , 18-20 mins at 180 should be spot on

Only slight change is I open the foil parcel when there's about 5 mins to go, I like the ham to be a little bit 'dry'

Have you considered asking the trained cook who is in your house rather than a bunch of MTBers?

If it was pasties, beer and bar snacks then fair enough ๐Ÿ˜‰

Simple tomato based curry ? Hard to get 'wrong' as such and lots of ways to manipulate timings & taste as you go along. Minimal panic involved.

Sod that, make tartiflette.
Chop spuds into disks and cook for 10 mins. Soften a sliced onion in a pan.
Layer into a baking disk spacing with the onion, spiced sausage (chorizo type stuff) and lardons.
Throw in a glass of white wine and lots of seasoning.
Put a hole wheel of rebechlon cheese in top
Throw in oven for 20 mins.
Serve with salad and a mustard dressing.

Easy, filthy and very difficult to cock up.

It was a Kentucky last night so I better do something nice tonight.

I am going for the Fish as i don't like potatoes.

I am suitably relaxed after a two beer bath and am about to start.

Cue - Deep Purple with Smoke on the Water

I can't think how parma ham would taste along side salmon. Is it nice?

I would bake in foil or steam btw (without the ham)

Keep it simple - eat the ham as a starter, and oven bake the salmon. If you have or can get some sweet chilli sauce to put on top of the salmon before baking, it makes a nice sticky glaze.

Microwave the spuds whole for 6 or 7 mins, and then chuck them in the oven at the same time as the salmon - 15-18 mins to crisp up the skins, cut open, tonnes of butter (don't scrimp here) and then a few salad leaves.

Job done.

Fish wrapped in foil with herbs& small amount of wine added, 22 mins in oven.
Chips fried in oil
Salad prepared, not out the packet!

Good luck ๐Ÿ™‚

PS. What have you done to your good lady?

Salmon is in the oven and the sauce prepped and standing. Too late to change. Salad is about to start when I finish the last of this glass.

She doesn't like chilli and I don't like potatoes.

She had her knee flossed yesterday (arthoscopy if you want to be technical) and is fine but not good a sitting still

Chvck, I'm sorry, I'm a touch confused here, you don't like tartiflette?!?! A combination of cheese, wine, potatoes and cured meat? I'm going to need to sit down and take this revelation in.

Unwrap the foil to let the ham crisp up. Fine.

Open the oven a couple of minutes later to check - OW I HAVE JUST STEAMED MY EYEBALLS!!!!!!!

I like all the components but they just don't work together for me! Maybe I should try it again...

OP - now you've done it! ๐Ÿ™„ ๐Ÿ˜

She will expect you to cook all of the time! ๐Ÿ™

You should have screwed it up, somehow. ๐Ÿ˜ก With Picolax, maybe. ๐Ÿ˜€

Beans on Plate.

Grated cheese on top is allowed. Curry powder or chili sauce mixed in prior to microwaving beans is gourmet.

Does not compute, what do you get from the chippy?

To the tartiflette hater

I like all the components but they just don't work together for me! Maybe I should try it again...

Every savoury food is enhanced with the addition of cheese or bacon (fact). This not only has both, but they are 50% of the ingredients! Try again, if you fail, have a stern word with yourself, then repeat.
