Jack's fruity curry:
Ingredients
Mahoosive bag washed spinach from Costco / wherever
Sweet potatoes
previously roasted chicken leftovers
garlic
thai curry paste
creamed cocunut
raisins
Steam the sweet potatoes above 1 pint water
whilst that's doing (about 20 minutes), in a wok fry down the spinach and put in the garlic.
Blend to a puree.
Add the curry paste, the creamed coconut and the meat. Hopefully the potatoes are done at this point, stick them in and the water that was under them.
Throw in a handful of raisins.
Bubble it a bit until you think it's done.
Enjoy. I believe it to be iDiet compliant too.
Sounds nice - will try that next time I roast a chicken (that could be the wrong turn of phrase...)
Ricky Stein does a nice lamb curry with spinach, melts in the mouth and a firm favorite in FH towers.
