I have been using an old, rotary Salter thing for years, and I find I would actually like something accurate.
About 15 years ago, my in-laws had digital scales that supposedly measured fat %, water %, as well as conventional weight, but I never believed it. I mean, what kind of witchcraft is that?
In any case, can you please recommend me a decent unit that will help me understand what's going on with my body composition, that is both accurate and scientific - as opposed to novelty?

There is nothing that is accurate and scientific. The best you can get is something that is repeatable and shows changes for your body only. Dcr did a big comparison vs proper scientific tests a while back. The main benefit is getting something that is wifi connected so you can keep an accurate log without typing stuff in. That means choosing the platform rather than the device e.g. if you use Garmin connect to log rides/runs you are better with a Garmin scale
Judging by all the different ones I've had over the years then I don't think there is a decent set of scales for the home. Not accurate ones anyway.
Oh, and I would probably by a Garmin index scale for 95 squids from Amazon as I'm a Garmin connect user and that scale is no better or worse than all the others
I just bought some - whilst the Garmins etc look nice I couldn't justify the price so bought some of these

£15, they seem very good to me and do the body fat / water% analysis etc - pretty pleased with them

Have a look at the Nokia (formerly Withings) WiFi scales. If you like graphs...

They send an electrical current from one foot to the other, and measure the conductivity through your legs. Some of them also have hand grips, which may be better as it goes through your whole body.
Still, probably not very accurate.
It is affected by how hydrated your are. But if you used the scales at the same time of day, it could give you a general trend.
