Currently training for an Ironman (6 wks into a 24wk program) and already fairly bored of my typical evening meals:
Chicken breast, lots of vegetbale and sweet potato / wholewheat pasta with natural yoghurt and fruit for desert.
Any inspiration from the forum for healthy meal ideas?
Lean Protein, Veg or Salad and good carbs must feature ๐
And to add to the moon/stick requirements, must be relatively quick to prepare, not much spare time in the evenings ๐
Fish features a lot in our diet, i love mackerel and salmon, don't write off potatoes either, good after a hard training session.
BBC Good Food has a whole load of marathon recipes:

I use their website loads, they have some excellent stuff on there.
FWIW I eat a lot of curry (homemade, so not too much fat or salt), pulses (chickpeas are a favourite), veg, etc. Seems to work so far.
Edit: I don't worry too much about not eating bread, rice, potatoes etc - I'm training hard enough as is, and I'm not 100% convinced by the "science" of paleo diets etc.
