..a whole chicken tonight???? ❓

Picked up a cheap free range one at the supermarket lunchtime.

Hainnanese Chicken Rice

But what they all miss is the 50/50 soya sauce / sesame oil mix, which you pur over the chicken, and then scoop onto the rice

The Jamie Oliver roast chicken is amazing (lift up the skin carefully and baste between the skin and meat with butter, garlic and herbs).

Yes, done that one a few times. Really good.

Quite fancy something chinesey. Good call there. Anyone tried Jamie Oliver's sweet and sour whole chicken?

Chinesy is dead easy - just make a baste using some or all of....

sherry, soy, honey, star anise, tomato ketchup, ginger, garlic

Spatchcock the chicken and rub with your fav herbs chilli olive oil and roast for 40mins until the skin is a nice and dark Golden colour.
