Struggling to picture what size I might need for a labrador sized dog.

The boot (Passat estate) is 100cm wide * 90cm deep

Would a 54cm wide * 70cm deep be big enough ?
It looks small when I wave a tape measure about, but big enough when I look at the car boot

we haven't got the dog yet & it is looking like we'll need the create to pick up the dog.

We have two of these for ours working cockers; the eldest is that not much smaller than a small lab and they go into them fine, in fact if the eldest sees the van open he'll go in his and chill out: https://innerwolf.co.uk/maelson-soft-kennel.html Size 72.

We have a Beagle and went for a 76x54x54 as he is classed as medium.
Ours is a small SUV and had to go for an Ellie Bo sloping cage to clear the tailgate.
