My wife hardly ever uses her google account, but when she logged into it using face id she noticed that her name had changed to a foreign one and the account was now called her e-mail%her mailserver.co.uk@gtempaccount.com.
Does this mean she's been hacked or is that account name normal for google? As you may guess my computer literacy is low. She immediately deleted said account.

That your wife knows nothing about what's going on suggests that there may be some illegitimate activity afoot, however this discussion over on the Google Workspace area suggests that there may be legitimate reasons why the account became a temporary account.

Regardless of whether it is or isn't I'd be changing passwords.
