With a view to insuring the new bike, built entirely from online-bought bits...
Will a copy of the invoice showing product & amount prove how much the bike is worth?
Eg: Here is a receipt for the wheel, and one for the forks and one for the frame?

Ask your insurance company - valuation from a bike shop is common.

It can, but Insurers will likely offer an off the shelf equivalent rather than what you paid.
