So I cocked-up the stamp amount on a couple of cards, one to France, one to republic of Ireland.

Does anyone know what will happen at the other end? In the UK the recipient will get a note saying that there's something at the post office for them to collect, which I don't want to happen as the recipients are in their 90s.

Will they just get not delivered?

I believe they kidnap the firstborn of the recipient, and post you back one of their severed digits per day until you cover the shortfall

If business frank, it gets delivered and I have to stump up the difference plus £1 or something like it.

If stamps they'll come round and bum your dog or some such.

My wife handed me a stack of 25 cards to post a few years back.

I went out, put them in the box and came home.

"How much was the postage?"
"Errrm, I just put them in the box"
"They didn't have stamps on!"
"They did!"
"Only the top one, I just had the one stamp left"
"Ah"

We didn't dare ask and no one mentioned it...

Local agreements apply.. Sometimes they just post them without question nor recompense, sometimes they just bin them.
Hard to quantify really.

Best be safe and Post another with the words "Soz folks, but you may have not received the previous card due to my incompetence "
