Thinking about dragging myself into the 21st century and replacing my aging DVD player with a Blueray player, but do any/all of them come with a full complement of dts outputs (i.e. 6 sets of phono/rca sockets)? Unfortunately that's the only input my surround sound system takes.

You need to head on over to AVForums. They'll see you right. My eBay Pioneer BluRay has 'em but I think they are becoming increasingly rare.
I'd assume most are hdmi.
I assume your receiver/processor is an older unit that can process DTS itself but needs the DTS to come from the DVD/Blu Ray Player?
Very few Blu Ray players have them fitted nowadays. You generally need to be paying towards the top end.
If you do get a recent one, it actually outputs the latest versions of surround sound from the player, which should be an improvement on even DTS.

Depending on your system it may be cheaper and easier to buy a new HDMI receiver/amp. If your system is used for music as well, it is possible to keep a 2 channel amp for your music duties and to have a surround system "sharing" the front left and fight speakers.
As always, a lot depends on your budget.

The surround sound system has the dts processor built into the sub box, and has stereo in- or dts in as the only options, both phono/rca.
Other than the centre speaker being a bit weedy, the whole setup sounds great, so I'm loathe to replace everything. Maybe a second hand older blue ray player would be a better idea.
