I'm going on holiday to Central York in October (well someone had to). I get an hour before other (non cycling) half is up and ready and sometimes an hour in the evening. Is there anywhere to MTB within striking distance of Central york or can anyone recommend a circular road route, taking about an hour, hills are fine.

You'll be lucky to find anything even vaguely hilly within an hour of york; let alone inside an hours round trip. I'd head out north on the roadbike and construct a loop in the country lanes in the 'V' created by the A19 to Thirsk and the A64 to Scarborough.
Definitely no mountain biking. No hills either as York is smack bang in the middle of the Vale of York (wide flat bit between the Yorkshire Dales and the North Yorks Moors). Nearest hills are the Howardian Hills, but they're probably more 30 min cycle away on a mtb. You'd be better off taking a road bike tbh.
EDIT: basically what he said ^^^^. Only thing I can think of is doing a there and back on the Transpennine Trail heading south. Just south of York after Bishopthorpe on the LHS there's what looks like a jump track thing you could have a play on if that's you thing. otherwise head north/north east for the best road riding (obviously avoid the A roads)
