I've currently got XT M765 calipers with the dual control levers.
I've seen a set of the XT M775 servowave levers cheap online and given that I might move the bike to singlespeed i'll be need new levers anyway.
Are they compatible? Will my existing hose/fittings screw directly into the new servowave levers so will just need to give them a bleed?

Yes, they'll work fine.
And yes, pretty sure you'll be able to swap the hoses over without new fittings, although it's probably worth getting new olives in just case they leak a bit. Will need to bleed to get fluid in the new reservoirs.

Just picked up a new set for £50 inc delivery including all the bits and bobs, cables, oil, olives etc from cycle surgery.
