I need more braking power, 160mm rotors snd sintered pads just aren’t quite enough I recognise it might require a new fork etc. But could you pair a MTB caliper with the GRX levers?

I believe all the Shimano 2 piston calipers push the same oil volume.
The Hope RX4 caliper might be easier/cheaper than a new fork.
Clark also make a 160FM-180FM adaptor if your forks are up to it.

Is there not a mineral oil / DOT5.1 compatibility problem with mating a shimano lever with a Hope caliper?
Was looking at this as a possible fix for my current banshee shimano brakes on my cross bike but thought this would be a problem.

They actually do 4 - post mount & flat mount for both dot & mineral oil
Specific RX4s are designed for mineral oil.
If you need more power, switch to organic pads .
Three - they don't do mineral post mount now. Or so I was told.
I've got GRX 400 levers paired with Zee brakes on my gravel bike and they work just fine. You may need to get new front and rear mechs...
I use xt m8000 calipers with some Di2 road levers. Those shifters are a few years old. This set up works a lot better than with r785 calipers.

Well they're still available to order on the Hope B2B so I guess you were told wrong.
