I am expecting to hear from my insurance tomorrow about a replacement for my CX, stolen in May.
If I have to use Wheelies, which would you choose?

Tough one - one has hydro brakes, the other disk - Otherwise I'd rather have the Cannondale.
I would probably get cash instead and buy something different. Maybe second hand.
For the same money (£1160) I got the carbon force-equipped Boardman CXR and love it to bits.
Strictly a cross, rather than adventure?
To be used for commuting, or training/races?

But not much use carrying that extra weight for exclusively non-commute duties.
The brand snob in me says Cannondale but I prefer the spec on the Cube.
The difference in spec could be regarded as 'service part' that will get swapped out at some point.
I have the Spyre C cable disk callipers on my Jake and while they are better than the ones that arrived with the bike and a lot more low profile (I don't hit my heel on the Spyre's) they are not 'emergency stop' good and have found the need to find a gap where hydraulic brakes would have pulled me up.
Cube, get the Cube.
Hydraulic brakes are a significant difference IMO - cube on that basis if it's for general riding. If it's for racing between the tapes then the CAADX.
Pinnacle Arkrose 3 and put £100 toward it would be my choice if you are not racing - 105 and hydraulics, praxis rings.
Another vote for the Cube - have a full Ultegra hydro setup on my gravel bike and it's simply flawless. No way I'd go back to pissing about with cables again.
If you're racing, this doesn't really matter, but if you're putting miles on it, I'd definitely chase the better spec here.
