I've got a pair of 'Strange' grips, XT shifters and a CatEye Strada keeping count.
Could put a Minkey on which I picked up from the Typhoo box this week - but he'd not last long in this weather!
work bike (steel larkspur) - purple ourys, 8speed deore, three bells, computer, reflector, light bracket
456 - specialized enduro lock-ons, sram x9/avid juicy7, L&M light mount, bell
Merida - Spec enduro grips, XTlevers, Garmin mount
singlespeed, Mary bars, Spec enduro grips, comedy bell, xt brake levers, garmin mount
pompino - metallic blue satin fizik tape, exage brake levers, nothing else
ODI Rogues + bar-ends, Juicy 5s and Deore XT shifters on the mtb.
Road bike has my P7 light bar-mount, stock hoods/brake levers and bar tape.

MTB: Little as possible - Superstar Grips, X9 Shifters, SLX Brakes.
Roadie: Far too much - Ultegra STIs, Shimano Flightdeck, Dahon Biologic iPhone case, Cinelli gel strips and Cinelli carbon tape.
SS: Bar tape and a brake lever.

Just the usual, 2 x brake levers, Superstar lock-on grips and a right-hand shifter - I don't like clutter (my lights are removed after my commute) but I do have my eye on a little Sportcount bar mounted stopwatch to try to improve my times on the local DHs.

Ergon grips then matchmakers for the x9 shifters, juicy carbons and the RS pushloc nice and uncluttered one clamp for each side.
