I know I am approaching Kryton57 levels of shopping ineptitude, but this seems a bit hard to crack.

I want a small compact bundle for a tube and CO2, but I'd also like to stick my phone in it. There's a Lezyne one that says it takes a phone but it's also pretty big. Imagine the size of a phone with a tube folded to fit on top of it, and then a CO2 cartridge down the side - that's how big I want it to be.

Also could do with being waterproof etc to protect the phone.

Topeak wedge drybag looks ok in small. Wonder if it'll fit a phone?

I have fit an iPhone 6 in my lezyne road caddy before but it wouldn’t leave any space for co2 or multi tool, just a tube. Not waterproof either

Get one of those "strap to your arm whilst jogging" waterproof cases and strap it to your existing saddlebag, instead (or the junction of toptube/downtube)
(Or your water bottle)

The larger Fizik one will take a modest sized phone and clips directly to the saddle. But what's wrong with a back pocket? When the worst comes and I'm loaded into the ambulance, they can identify me from my phone or wristband.

But what's wrong with a back pocket?

Well, the clothes I like to wear MTBing don't have back pockets. It goes in back pocket when road riding.
