I currently have 160mm Hayes HFX-9's F+R on my bike. Although they stop relatively adequately,a bit more power on the front would be nice.
So, would upgrading to a 180mm rotor improve the power? and would I be able to do this anyway, as the manual for my forks says '
Disk brake mount: XC International Standard for 6" disk' does that mean going to 180mm would affect the forks?

Yes, other will give you more power if you fit a larger disc. You just need an adapter to bring the caliper out to the right place for the larger disc.
That fork manual sounds like its just telling you what discs fit without adapters. Is there anything in the manual that says "discs no larger than x"? Which fork is it?

i use a 180 on 04 bombers you will be ok IMHO

will give u 22% more power or some thing like that, put a 203mm on for real stopping power.
203mm rotor + Formula The One brakes = easy one finger over the bars action. ๐
