Trail Riding Cake - One for the weekend.

A perfect riding companion.

Delicious trail cake by Oms, perfected to help you smile while you munch the miles.

Ingredients:

1 cup ground almond (90g).

1/2 cup crushed pecan (50g).

1 cup self-raising flour (150g).

1 1/2 cup caster sugar (300g).

1/2 cup dessicated coconut (37.5g).

1/2 pack butter (125g).

3 large eggs, or 4 medium.

1 teaspoon vanilla essence.

1 large orange zest.

1 whole grated apple (no peel). Eater (royal gala, or pink lady).

Important items:

You need a Bundt pan like this else the middle will not cook or rise: https://www.ikea.com/gb/en/p/vardagen-loose-base-cake-tin-silver-colour-80256983/

Method:

-Cut a piece of grease paper to fit the bottom of the tin.
-Butter/oil the sides of the tin.
-Mix all ingredients well in a bowl, then carefully spread it out into the tin.
-Place in a pre-heated oven (Fan, 170c) for 40mins.

Remove, place two tea towels on top, and allow it to cool in the tin (to help retain moisture).

Cut into slices with a bread/serrated knife. Store in a tin lined with grease paper.

Don't eat it all at once.

Very nice too, though I have had to hide it from my wife who has become very partial to it.

Nice one.

Forgot to say - if you find it a bit dry, you can try to add a tiny bit of milk to the mix. 👍 I try to pick giant apples so that I don't have to.ย

@Oms , my wife just asked, what are you going to do with the other 450g of Pecan nuts? Fair point, they are not cheap!
