So I've bought myself a torque wrench, but have no idea what I need to torque to!

Can't find the recommended levels at any of the sites so didn't know if there were any general guidelines for carbon steerer tubes and seatposts clamps.

Fork is a Deda blackfin, fitted to an on one pro carbon. I'm thinking 4nm for each would be a good starting point as most other manufactures seem to have 5 as a top limit.

Most torque settings can be found on the component. Stems are usually around 4 - 6 Nm, seat posts around 8 - 10ish Nm but if unsure then settings can usually be found on manufacturers web site.

The torque setting will be for the stem and not the steerer and will probably be found near the bolts.
