My Zee mech is knackered, I have another one on route used, should I swap the jockey wheels out my old one onto the new/used one? or just leave it as is and wait for the new/used wheels to adapt to the chain?

Completely impossible to say without seeing at least.
Given how easy a job it is I'd try the new mech and see, unless you want the security of knowing they'll work.

I don;t think new jockey wheels on an old chain will make any difference. if they skip occasionally what will happen and they don't fully engage or take any load
