I recently built up a bike for the Mrs, which she has decided she no longer wants. I would like to recoup as much of my investment as possible but when I calculated what I've spent, It seems a bit much to ask for a second hand bike.
Would get more money splitting and selling the individual components?

Generally YES as long as the parts still have some life left in them and you can be bothered to strip it all done and list it?
