I have a rear coil shock that has 50mm stroke and is 200mm eye to eye, which needs a new spring. I have tried 2.00 rockshox spring. But it is 10mm too big. So would I need to go for a 165mm spring instead

I have a box of shock springs, about 15 to 20 at a guess, if you send me over an email we can check and see if any of them will fit, if none of them do I'll hopefully be able to help you find one on feebay that will.
That said to work out your spring rate you need to know the travel of the frame, the shocks stroke / I2I and your weight. Also different springs have different internal diameters. If you have the original spring measure it's internal and external diameter.
