I have a Shimano M5120 which is 10 and 11 speed compatible.

However, the box states 1 x 10 up to 46T, but only 2 x 11 up to 42T, i.e. not for 1 x 11 use.

Can this be used for 1 x 11?

No reason why not, its rated up to 46T max for 1x.

for 2x you have extra slack to take up from the front rings, hence them listing a smaller cassette.

It might well do a 1x51T but obvs the rd-m5100 would be better.

Incidentally I run the rd-m6100 1x12 mech on 1x11 just fine.
