The hose you need: what diameter? I understand that windscreen washer hose is fine but it appears to come in different diameters.

I used 3mm from B&Q - good tight fit onto the syringe and the bleed nipple.

Stuff that comes in the Shimano kit is 4mm ID.

Found the 4mm stuff in the Shimano bleed kit a bit loose.

Also, what's that bit of black plastic which comes with the official kit?

It clips the hose onto the bleed nipple. You push the hose onto the nipple then push the black bit down over the nipple. It works a treat. I find putting a small zip tie around the hose and syringe nozzle helps keep it in place at that end too. You can give a good push on the syringe without risking squirting fluid everywhere.

I feel like a right numpty. And have had oil squirt everywhere at both ends before. Can you use the black plastic bit to undo the bleed nipple too instead of a 6mm spanner?
