What is the correct way to set sag on an air shock.

I've read: You get kitted up, and sit gently on the bike and measure the sag you get - adjust to around 25% and off you ride.

I've also read: get kitted up, sit down on the bike, bounce around a bit and where the o-ring settles, measure from there and adjust accordingly to get around 25%

IS there a definitive way to do this?

your first option but depends on how you like to ride for plush go for 33%. i'd start off with 25% see how it feels and how much of the travel you are using and adjust accordingly you'll also need to set rebound, either ride off a small kerb and keep increasing until the bike stops bobbing on landing or find a nice bit of singletrack and experiment

Well I wouldn't just do it sitting.

Don't worry about being too exact. It's only a starting point anyway. Personally, I go for 28% while fitted up and rolling on a smooth road after bouncing. The important think is that you use all the travel ride your hard/fast stuff but don't regularly bottom it out. Once or twice a ride is a good guide.
