Does anyone know if its possible to reduce a 150mm pike down to 120mm?

Which Pike?
Because of the air transfer port which supplies the negative air spring, the modern Pike requires a different air shaft. What length is available is dependent on the specific fork, usually dictated by wheel size.
However, I believe the current ones use a different air shaft that is defined by the desired travel.
