Front rotor is currently a 185mm but the one i am looking at is only 180mm....will this be ok or will i die?

Not really suitable.
There will be 5mm less disc contact and it won't be wearing across the whole braking area.
If you use adapters then get a 180mm one.

Which discs have you got and thinking about? Still probably not suitable though as you don't really want a lip on the braking surface as your wheel/caliper won't line up the same every time.
